Pork Stir-fry with Ginger Marinade

Pork Stir-fry with Ginger or Buta Shouga Yaki

Ginger is a great ingredient for marinating meat, especially Pork. You can get “shabu shabu” style pork at any Japanese Supermarket. This meat thinly sliced – perfect for this recipe – usually served with a shredded cabbage salad.

Serves 2 (or 1 if you’re hungry)

200g thinly cut pork slices, “shabu shabu” style
1 medium onion

½ tbsp. vegetable oil

Sauce:

1 tbsp. vegetable oil

2 1/2 tbsp. soy sauce

2 tbs mirin

1/3 tbs. sugar

1 tbsp. oroshi ginger, (grated) ginger

1. Slice the onion in small pieces. Add the ½ tbsp.vegetable oil in a frying pan on medium heat. Cook onion and add a little salt and pepper till they turn light brown. Place in separate plate.

2. In the same frying pan on medium heat, add 1 tbsp. vegetable oil . Separate the pork and place it in the frying pan, piece by piece. This is so you won’t end up with a clump of meat on the pan. Cook till the meat turns brown. Place in separate plate.

3. Again, in the same frying pan, add the soy sauce, mirin, sugar, and the grated ginger on high heat. After 1-2 minutes, add the pork and onion and cook in sauce till it caramelizes. Serve with rice and salad.
