Salad with Natto Dressing

SALAD WITH NATTO DRESSING- 納豆ドレッシングサラダ

This recipe is for the adventurous! If you haven’t tried NATTO yet, then this is a good way to start. The best way to eat this would be on top of hot white rice, but then again you are already masking the true flavor of NATTO which is just with soy sauce so take the chance and slurp this on its own!

Serves 4-6
½ cup chives
1 bunch spinach
¼ cup dried wakame
2 cups daikon, shredded or cut into thin, long strips
3 cups bean sprouts

Natto Dressing:

1 pkg. natto
1 red chili pepper, seeded & finely chopped
1 clove garlic, grated
¼ cup vinegar
2 tbsp. soy sauce
2 tbsp. sesame oil
1 tbsp. miso

1. Blanch chives and drain.

2. Flash boil the spinach in saltwater.Drain and squeeze excess water out. Cut both spinach and chives into 3-5cm pieces.

3. Soak wakame in cold water and cut into bite-sized pieces.

4. Rub salt into daikon and squeeze excess water out.

5. Combine natto dressing ingredients and mix well.

6. Mix chives, spinach, wakame, daikon and bean sprouts and serve with natto dressing.
