
Daikon Soup is one of my favorite Japanese dishes. It’s not all about sushi and yakitori… I feel like I’ve said this before.
During my 3 month long apartment hunt I was staying in weekly mansions which are about the size of a jail cell. I could barely fit in the bathroom so let’s just say cooking was the last thing on my mind. But now that I’m settled into a place I can call home… it’s about time to cook some food that sticks to the bones.
I went to the supermarket and loaded up on the essentials for Japanese cooking. Soy sauce, mirin and sake were on the list… but I forgot the sake so I used a little Kumamoto shochu instead. It worked out just fine.
Pork, daikon, ginger, water, konbu, mirin, sake and soy sauce. Cook it for a long, long time… and eat it for three days straight like I did.
